Soft copper colour. There is a caramelised, creamy and quite rich, buttery palate with popcorn, dried apricot and even berry flavours on this full-bodied wine. There’s more than a passing resemblance to old-school Chardonnay in that amalgam of flavours. At the same time, it is also quite phenolic from start to finish, drying ( just shy of astringent), and clearly oxidative.

Grapes were hand-picked from the dry-farmed steep east slopes of the vineyard. Light soils and good drainage produce very high quality fruit. De-stemmed, pied de cuve ferment on skins for seven days before being pressed off just prior to the finish of fermentation. Rested on fine lees following full malolactic fermentation until bottling. Unfined, reluctantly filtered and minimal sulphur added prior to bottling.

The aim of sustainable wines is for the viticulture and winemaking process to be environmentally conscious and socially responsible - whilst maintaining economic feasibility and high quality wines.
