Has you would expect from Sato this wine is well made and very clean, on the nose just ripe fresh juicy strawberries and dark plums, smooth cedar and smoke notes. The palate follows the nose with fresh red fruits and tobacco, medium body with cedar smoothing on the finish.
This wine is 100% Pinot Noir grape varietal grown at "Pisa Terrace Vineyard" at the foothill of Mt. Pisa. The soil is gravely, mineral abundant, well drained with quartz and schist. The vineyard is looked after with no pesticides, herbicides, systemic fungicides or inorganic fertilisers used.
Organically farmed vineyard the grapes were hand harvest between the 9th and 11th of April of 2017. With natural wild yeast the grapes are fermented using 17% whole bunch. No commercial enzymes, bacteria or additives used except for <20mg/L sulphites before bottling. Wine was aged 19 months in French oak barrels with 13% on new oak. Bottled on 22nd of November of 2018 without fining or filtration. Was produced 4836 bottles on total.
