Two Tone refers to the two kinds of cask used for the maturation of this whisky; European oak which formerly held New Zealand red wine and American white oak used exclusively for whisky. Find sea air and caramelised fruits on the nose, followed by red berries, apricot and spice on the palate. In place of an age statement the infinity symbol marking this bottling is symbolic of the marriage of casks.
We like having Thomson Whisky Two Tone Release with a large cube of ice and one Orange zest, or if like lighter drinks try with Organic Gingerella over ice and a slice of lemon. Those are the cheeses and foods we think Two Tone Release will pair well - Mild cheeses like camembert, brie, gruyere, pate, freshly baked bread, mild meats, natural honey, fresh berries like raspberries, rhubarb, caramel, cream, anything buttery such as croissants.
